ZUCCHINI CASSEROLE 
3 c. unpeeled sliced zucchini
1 onion, sliced
1 green pepper, diced
2 tbsp. oil
1 lb. ground beef
1/2 tsp. salt
1/8 tsp. pepper
1/8 tsp. paprika
2 c. toast cubes
1 c. diced cheese
1 (8 oz.) can tomato sauce
1 can water chestnuts

Cook zucchini in boiling salted water for 5 minutes. Drain saute meat onions, peppers in oil. Add seasonings.

Place layer of zucchini, one of meat mixture, and one of toast and water chestnuts. Repeat. Place cheese on top and pour tomato sauce over all. Bake at 325 degrees for 1 hour.
