ZUCCHINI CASSEROLE 
3 lbs. zucchini
3 onions, chopped
1 stick butter
1/2 lb. fresh mushrooms, sauteed (opt.)

SAUCE:

2 tbsp. melted butter
1/2 c. grated cheddar cheese
1 tsp. seasoned salt
1 c. sour cream

TOPPING:

2 tbsp. grated cheddar cheese
Crushed Ritz crackers

Slice zucchini thin and parboil in salted water. Drain. Chop onions and saute in butter with mushrooms. Mix sauce, zucchini and onions. Heat. Pour in a 2 quart casserole and add topping. Bake at 350 degrees for 30 minutes.
