RHUBARB CAKE | |
1/4 tsp. salt 2 c. all-purpose flour 3 c. raw rhubarb, cut into 1/4-inch pieces 1/4 tsp. ground cloves 1 tsp. ground cinnamon Cream together sugar and butter; add eggs and milk. Stir in mixed dry ingredients. Mix well. Fold in rhubarb. Batter will be thick. Spread into a well greased 9x13-inch pan. Topping: Sugar Cinnamon Walnuts, optional Sprinkle top of batter with a mixture of a little sugar and cinnamon. A few chopped walnuts can be added also. Bake at 350°F for 35 minutes or until toothpick inserted into middle comes out clean. |
