SPANISH PORK CHOPS 
2 c. cooked UNCLE BEN'S® rice
4 lean pork chops
1 tbsp. oil
1 1/2 c. canned tomatoes
1/4 tsp. pepper
1/4 c. diced onion
1/3 c. diced celery
2 tbsp. green pepper
1 1/2 tsp. salt
2 tbsp. minced parsley

Brown chops in heavy skillet; remove and add onion, celery, and peppers to drippings. Saute until tender. Add tomatoes, salt, and pepper; simmer for 10 minutes. Put chops in baking dish. Sprinkle with salt and pepper and top each with mound of 1/2 cup cooked rice. Pour sauce over all; sprinkle with parsley. Cover and bake at 350 degrees about 1 hour.
