MAMA'S PORK CHOPS AND SPANISH
RICE
 
6-8 pork chops
1 bell pepper
1 med. onion
1 c. to 1 1/2 c. long grain rice
2 lg. cans tomatoes
Salt and pepper to taste

Brown chops first in just a little oil. Add tomatoes, rice, chopped or sliced bell pepper and onion and salt and pepper to taste. Bring to boil. Cover, then simmer for one hour or until chops are tender. Check during cooking time to see if more tomatoes are needed.
