SPANISH RICE PORK CHOPS 
6 pork chops
2 tbsp. shortening
1 tsp. salt
1/2 tsp. chili powder
Dash of pepper
3/4 c. uncooked rice
1/2 c. chopped onions
1/4 c. chopped bell pepper
1 (28 oz.) can tomatoes
1/2 c. shredded sharp cheese

Slowly brown chops in melted shortening; drain off fat. Combine salt, chili powder, and pepper. Sprinkle over chops that have been placed in a baking dish. Add rice, onion, and pepper. Pour in tomatoes. Cover and bake in oven at 325 degrees for 1 hour. Sprinkle cheese over top when ready to serve.
