CANDY EASTER EGGS 
1 (8 oz.) pkg. cream cheese
1 cup (2 sticks) butter, softened
1 tbsp. vanilla
2 cups peanut butter or 2 cups coconut flakes
2 (1 lb. ea.) boxes confectioners' sugar
16 oz. chocolate wafers (I use Wilton)

In a large bowl, mix with your hands cream cheese, butter, vanilla and peanut butter or coconut flakes. Gradually add confectioners' sugar and continue mixing with hands. Form eggs and let set in refrigerator overnight.

Melt chocolate wafers in double boiler and dip eggs. Place on wire rack and allow chocolate to set before serving.
