LEMON CHICKEN 
1 lb. chicken cutlets
16 crushed garlic melba rounds
Parsley flakes
2 tbsp. grated Parmesan cheese
Grated rind of 1 lemon
Juice of 1/2 lemon
1/2 stick butter

Melt butter, add lemon juice and rind. Mix crumbs, parsley and cheese together. Dip chicken in butter-lemon mixture. Roll in crumb mixture. Lightly grease a cookie sheet and arrange cutlets. Bake at 350 degrees for 30 to 40 minutes, or until done.
