STUFFED MANICOTTI 
1 (8 oz.) pkg. manicotti noodles
1 (8 oz.) Mozzarella cheese, grated
1 (8 oz.) Monterey Jack pepper cheese, grated
1 c. cottage cheese
2 eggs, beaten
3 tbsp. Romano cheese, grated
3 tbsp. soft butter
1/2 tsp. salt & pepper
1 lb. hamburger
1 qt. Ragu spaghetti sauce

Cook manicotti noodles as directed on package. Lay in 9"x13" baking pan and stuff when cool with mixture of cheese, eggs, salt, pepper and butter. Brown hamburger meat, seasoned to your liking. (I use a chopped onion in mine.) Add a quart of Ragu sauce to the meat and simmer a few minutes. Pour over stuffed manicotti. Bake 35 minutes in 350 degree oven. Serves 6 to 8.
