4 c. sliced, cooked beets
1 c. beet juice or water
2 tbsp. cornstarch
1/4 tsp. salt
2 tbsp. lemon juice
1 tbsp. honey

Cook juice, starch, and salt together until clear and thick. Remove from heat. Add beets, lemon juice, and honey.
