FANNY MAY MINT CAKE
CAKE:

1/2 c. butter
1 c. sugar
4 eggs
1 tsp. vanilla
1 (16 oz.) can Hershey chocolate syrup
1 c. plus 1 tbsp. flour

LAYER 2:
1/2 c. butter
2 c. powdered sugar
2 tbsp. milk
1 tsp. mint extract or 2 tbsp. creme de menthe
2-4 drops green food coloring (omit, if using creme de menthe)

LAYER 3:
6 tsp. butter
1 c. semi-sweet chocolate chips

CAKE: Cream butter, sugar, and eggs well. Then add other ingredients. Bake at 350 degrees for 25 minutes in jelly roll or 9x13 inch greased and floured pan. Don't over bake! Cool completely.

LAYER 2: Beat well butter, powdered sugar, milk, extract, and green food coloring. Spread over cooled cake. Refrigerate until cold.

LAYER 3: In small saucepan, over low heat, combine butter and chocolate chips. Spread over the green layer, let set a few minutes and cut into 1-inch pieces. Don't let this layer cool too long before cutting as it will crumble.
