SWISS OVEN OMELETTE 
6 slices partially cooked bacon
1 tbsp. bacon fat
1/3 c. chopped onion
8 eggs
1 (8 oz.) pkg. sliced Swiss cheese, cut in strips
1 c. milk
2 tsp. salt
1/2 tsp. pepper
2 tbsp. chopped parsley

Cook onion in bacon fat. Combine eggs, milk, salt and pepper and beat together. Add onion and parsley. Pour into 1 1/2 quart casserole. Add strips of cheese. Top with bacon slices. Bake at 350 degrees for 40 minutes. Serve immediately. Serves 6. (May substitute crumbled loose sausage and Americn cheese, baked in a flatter pan.)
