THE KITCHEN SINK OMELETTE 
5 eggs
2 tbsp. butter
1/4 c. ham, diced
1 tbsp. onion, diced
1 tbsp. celery, diced or green onion
1 tbsp. green or red pepper, diced
1/4 c. mushrooms, sliced
3 oz. cheese (your choice)
1/4 tsp. salt
Dash of pepper

Lightly saute ham, onion, celery, green pepper and mushrooms in butter. Beat eggs; add cheese, salt and pepper. Pour egg mixture into sauteed ingredients; stir briefly. Rotate frying pan so that egg mixture gently "rolls" around pan. When no more egg moves, use spatula to fold 1/3 of mixture toward center. Then fold opposite 1/3 over that and gently turn over entire omelette. Continue to cook to desired doneness. Serves 2 to 3.
