Beat enough eggs for the amount you want along with a dash of fish sauce (takes the place of salt - available in Oriental stores and pepper).
Use any kind of ground or finely chopped fresh meat. Crush a few cloves of garlic, dice some onion, dice some tomatoes, and grind a few peanuts.
In wok or frying pan heat enough oil so meat doesn't stick. Fry garlic first then add the meat. When meat is done, add onion and black pepper. Add peanuts and tomato. Sprinkle with fish sauce (Nam Plaa). Set aside.
Fry the egg in a little oil, spreading it out thin. When set put some of the meat mixture in the center. Fold sides over the meat. Flip. It can be made in one large omelette or several small ones. Serve with plain cooked rice.
