PANCIT 
3-4 boneless chicken breasts, cut into bite size pieces
1 c. water
2 tbsp. oil
1 lg. sliced onion
1 (10 oz.) pkg. French-cut green beans
1 lb. Chinese pea pods
1 bell pepper, sliced thin
2 c. shredded cabbage
2 c. sliced carrots
2 pkgs. pancit noodles
6 tbsp. soy sauce

In skillet combine chicken, soy sauce and water. Bring to a boil and cook for 5 minutes. Drain and reserve juices. Add oil to skillet and brown chicken pieces. Add onion. Cook and stir for 1 additional minute. Mix in remaining vegetables and simmer for 5 minutes. Stir in reserved juice and simmer another 5 minutes. Serves 6-8.
