STUFFED MUSHROOMS | |
2 c. Stove Top stuffing 1 c.hot water 16 lg. mushrooms 5 tbsp. butter, melted 1/2 sm. green pepper, finely chopped 1/2 sm. red pepper, finely chopped Heat broiler. Stir stuffing mix and water in medium bowl. Remove stems from mushrooms; chop stems. Cook and stir mushroom caps in 3 tablespoons hot butter in large skillet until lightly browned. Arrange in shallow baking dish. Cook and stir chopped mushroom stems and peppers in skillet until tender; stir in prepared stuffing. Spoon into mushroom caps; drizzle tops with remaining 2 tablespoons butter. Heat in broiler 5 minutes. Garnish with lettuce and pepper strips, if desired. Makes 10. |
