BOMBAY CHICKEN 
8 chicken breasts, halved
Salt, paprika & flour
4 tbsp. cooking oil
1 c. sherry
4 tbsp. brown sugar
2 tbsp. soy sauce
4 tbsp. cooking oil
1 tsp. ginger
4 tsp. sesame seeds
8 peach halves

Rinse and dry chicken pieces. Season with salt and paprika. Sprinkle with flour. Brown on both sides in 4 tablespoons oil. Remove pieces to 9 x 13 inch baking dish.

Prepare sauce by combining sherry, brown sugar, soy sauce, cooking oil, ginger and sesame seeds. Pour over chicken. Cover pan. Bake at 375 degrees for 45 minutes or until tender. To serve garnish with peach halves. Serve with curried rice and your favorite chutney.
