BANANA NUT BREAD 
2 c. all purpose flour
1 tsp. baking soda
1 tsp. cream of tartar
1/2 tsp. salt
1/2 c. butter, lightly salted
3/4 c. white/light brown sugar
2 large eggs
1 c. walnuts/pecans; chopped
1/2 tsp. lemon rind, grated
2 tbsp. water, hot
1 tsp. vanilla
1 1/2 c. bananas, mashed

Preheat oven to 350°F. Grease two 9x5x3 loaf pans. Mix flour with baking soda, cream of tartar, and salt. In large bowl, beat butter and sugar until smooth and creamy. Add eggs, one at a time, beating well after each addition. Stir in pecans, lemon rind, and mashed bananas. Add four mixture, 1/2 c. at a time, beating well after each addition. Stir in water and vanilla pour into prepared pans.

Bake 55-60 minutes, or until cake tester inserted in center of bread comes out clean. Remove bread from pan and put on wire cake rack. Cool completely.
