BANANA NUT BREAD 
2 c. sifted flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. chopped peanuts
1 egg
1/4 c. melted butter
3/4 c. firmly packed brown sugar
1 tbsp. vinegar
1/2 c. undiluted evaporated milk
1 c. mashed ripe banana

Sift flour, baking powder, soda and salt together. Stir in nuts; beat eggs. Add sugar and beat until light and creamy. Stir vinegar into evaporated milk. Add milk, banana and butter to egg mixture. Stir liquid ingredients into flour mixture until dry ingredients are moistened. Pour into buttered loaf pan, 8 1/2 x 4 1/2 x 2 1/2-inch.

Bake at 350°F for 1 hour. Cool and store 24 hours before slicing.
