OATMEAL BANANA NUT BREAD | |
1/2 c. shortening 1 c. sugar 2 eggs 1 c. mashed bananas 1 1/2 c. sifted flour 1 tsp. baking soda 1/4 tsp. salt 1 1/2 c. quick oats 3/4 c. chopped pecans 1 tsp. vanilla flavoring Cream shortening and sugar well; add eggs one at a time, mixing thoroughly after each addition. Add bananas and mix well. Sift flour, soda and salt; add with oats to creamed mixture. Stir in nuts and flavoring. Pour batter into greased 9x5-inch loaf pan. Bake at 350 degrees for 50-60 minutes or until inserted toothpick comes out clean. |
