1 1/4 c. oil
2 eggs
1 tsp. vanilla
2 c. sugar
3 c. fresh apples, chopped
3 c. flour
1 1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg

Mix oil, eggs, vanilla, sugar, and apples. Stir together flour, soda, salt, cinnamon, and nutmeg. Add to first mixture. Batter is very stiff. Sprinkle with cinnamon, sugar and 1/4 cup pecans. Bake at 375 degrees for 40 minutes in 13 x 9 inch pan.
