ITALIAN CHICKEN 
4-6 skinless boneless breasts
1 c. celery, chopped
1/2 c. onions, chopped fine
2 tbsp. rosemary
1/4 c. olive oil
2 tbsp. Italian type seasonings
6 potatoes wedged (varies according to size)
8 oz. Mozzarella cheese (more to taste)
4-5 garlic cloves, minced
Olive oil

Preheat oven to 350 degrees. In saucepan heat oil. Add celery, onion, spices and garlic. Cook until barely tender. In 13x9x2 pan, place 1/4 cup oil in bottom. Put wedges on bottom. Drizzle slightly with oil; sprinkle with salt and pepper. Place breasts on top.

Pour spice mixture on top. Bake until potatoes are tender, stirring mixture twice during cooking to move around and coat with spices, about 50 minutes to 1 hour. When done, sprinkle cheese and broil until melted. Serve with garlic bread. Serves 4.
