GENE'S BLUE RIBBON PEACH JAM | |
4 c. (about 3 lbs.) fully ripe peaches 2 tbsp. lemon juice 5 1/2 c. sugar 1 box Sure Jell fruit pectin Peel and grind or chop peaches very fine. Place in 6 or 8 quart sauce pot. Make sure you have 4 cups of peaches. Add lemon juice. Measure sugar and set aside. Mix fruit pectin into peaches in the pan. Place over high heat; stir until mixture comes to a full boil. Immediately add all sugar and stir. Bring to a full rolling boil and boil hard one minute, stirring constantly. Remove from heat and skim off foam. Ladle quickly into hot jars filling to within 1/4 inch of top. Cover with lids. Process in boiling water bath for 5 minutes. |
