GENE'S BLUE RIBBON PEACH JAM 
4 c. (about 3 lbs.) fully ripe peaches
2 tbsp. lemon juice
5 1/2 c. sugar
1 box Sure Jell fruit pectin

Peel and grind or chop peaches very fine. Place in 6 or 8 quart sauce pot. Make sure you have 4 cups of peaches. Add lemon juice.

Measure sugar and set aside.

Mix fruit pectin into peaches in the pan. Place over high heat; stir until mixture comes to a full boil. Immediately add all sugar and stir. Bring to a full rolling boil and boil hard one minute, stirring constantly. Remove from heat and skim off foam. Ladle quickly into hot jars filling to within 1/4 inch of top. Cover with lids. Process in boiling water bath for 5 minutes.

I've been sampling jams and making my own and have been amazed at how much sugar everyone uses. Do judges really award Blue ribbons to these overly sugary jams? I've been cutting the sugar by more than half and have found the natural flavors of the fruit start to shine through.

Just my personal opinion but I think the high sugar content is partly to preserve the product.
