EGGPLANT WITH SAUSAGE 
2 eggplants, peeled and sliced
4 eggs, beaten
Bread crumbs
Oil
2 jars favorite spaghetti sauce
1 lb. sweet Italian sausage

Dip eggplants in beaten egg and bread crumbs, fry on both sides in oil. Layer cooked eggplant and spaghetti sauce in 11x13 inch casserole. Meanwhile, cook sausage in covered frying pan in 3 tablespoons water. Place cooked sausage around sides of casserole. Cover with aluminum foil. Bake 25 minutes at 350 degrees. May be frozen. Serves 6-8.
