EASY EGGPLANT CASSEROLE 
1 sm. eggplant
1/2 lb. bulk sausage
1 sm. onion, chopped
1 egg, well beaten
1/2 c. dry bread crumbs
1 tbsp. butter, melted
1/4 c. cracker crumbs

Peel eggplant and cut into 1 inch cube; cook in a small amount of boiling water for 10 minutes or until tender. Drain. Let cool slightly. Cook sausage and onion until onion is tender and sausage is brown.

Combine eggplant, sausage mixture, egg and bread crumbs. Mix well and spoon into a greased 1 quart casserole. Combine butter and cracker crumbs; sprinkle over casserole. Bake at 350 degrees for 25 minutes. Yield: 4 servings.

Everyone in my family claimed to not like eggplant, however each and everyone loved this recipe and was begging for more. I did add about a 1/2 cup of grated cheddar cheese and omitted the bread crumbs due to the fact of not having any available. I will keep this recipe on hand for future use.

I didn't have sausage, so I used ground turkey. I added garlic and about 2 tsps of tomato paste when I was browning the turkey. Super delicious!!
