CHEESY BAKED FISH 
1 1/2 - 2 lbs. white fish fillets (sole, cod)
Green onion
Mushrooms
butter
Lemon juice
Dill weed
1/2 c. Monterey Jack cheese
1/4 c. bread crumbs
Dry white wine
Salt
Pepper
Celery salt

Grease bottom of baking dish with butter. Cover bottom with sliced fresh mushrooms and chopped green onion.

Season fish with salt, pepper, celery salt and lay over chopped mushrooms and onions. Drizzle 2 tablespoons of wine and lemon juice over fish. Sprinkle with dill weed. Sprinkle 1/2 cup shredded Monterey Jack cheese and 1/4 cup fine bread crumbs.

Melt 1/2 cup butter and drizzle over crumbs. Place large crinkled wet wax paper on top. Bake at 400 degrees 7 minutes. Remove paper and bake another 5 minutes.
