WHEAT BREAD | |
2 c. hot water 1/2 c. dry milk (opt.) 1/2 c. brown sugar, honey or molasses 1 tbsp. salt 1 tbsp. or packet active dry yeast 1/4 c. vegetable oil or butter 3 c. King Arthur stone ground whole wheat flour 3-4 c. King Arthur unbleached white flour To 2 cups hot water, add and let dissolve in 3 successive stages, 1 tablespoon sweetener, the yeast and salt. When all 3 are dissolved, add rest of sweetener, the shortening and 3 cups whole wheat flour. Mix thoroughly and let it sit for at least 2 hours. (All day if convenient.) This sponge will bubble. Add white flour. (3 1/2 cups if honey or molasses is used.) Knead until spongy. Cut dough in half and form into loaves. Place in greased bread pans. Let rise until double. Place in cold oven. Bake at 350 degrees for 35 to 40 minutes. |
