BEST WHOLE WHEAT BREAD | |
2 c. milk 1/3 c. brown sugar 3 tbsp. molasses or honey 1/2 c. shortening 2 c. whole wheat flour (more if a stronger wheat flavor is desired) 1 c. cool water 1 c. warm water with 3 tbsp. yeast dissolved in it 4 tsp. salt (or less) White flour Scald milk. Pour into large mixing bowl. Add shortening, sugar, molasses or honey, and salt. Stir a little, then add wheat flour and beat very well. Add water, and enough flour to make soft dough. Knead while adding more flour, until smooth and elastic. Put into greased bowl. Let rise until double. Punch down and let rise again. Shape into 3 loaves. Let rise until double, then bake at 350 degrees for 35 minutes or until done. Grease tops when removed from oven. Makes 3 loaves. |
