RICOTTA COOKIES 
1/2 c. butter (softened)
1 c. ricotta
1 tsp. vanilla
1 c. sugar
1 egg
2 c. flour
1 tsp. baking soda

ICING:

1 1/2 c. powdered sugar
2 tbsp. butter, softened
1/2 tsp. vanilla
Milk

Mix all ingredients together except for the flour and baking soda. After the above are mixed thoroughly add the flour and baking soda. Drop teaspoon size on a greased cookie sheet. Bake at 350 degrees for 10 minutes.

Mix ingredients for icing together, add milk for consistency. Add food coloring of your choice. Spread on cooled cookies.
