PUMPKIN COFFEE CAKE 
1/2 c. butter
3/4 c. sugar
1 tsp. vanilla
3 eggs
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 c. sour cream
1 3/4 c. pumpkin (16 oz. can)
1 slightly beaten egg
1/3 c. sugar
1 tsp. pumpkin pie spice

Combine butter, 3/4 cup sugar, and vanilla; add 3 eggs and beat well. Combine dry ingredients and add alternately with sour cream. Combine pumpkin, beaten egg, 1/3 cup sugar, and pie spice.

Spoon 1/2 batter in 13 x 9 x 2 baking dish. Spread to corners.

STREUSEL:

1 c. packed brown sugar
1/3 c. butter
2 tsp. cinnamon

Cut together until blended.

Spread pumpkin over streusel. Sprinkle remaining streusel over mixture. Bake at 325 degrees for 50-60 minutes.

Sprinkle half of streusel over batter.
