VEGETARIAN CASSEROLE 
2 (16 oz.) bags frozen mixed vegetables (thawed & drained)
1/2 stick butter
1/2 c. cottage cheese
1 c. Cheddar cheese, cubed
1 c. mozzarella cheese, cubed
1 c. Monterey Jack cheese, cubed
1/2 c. sour cream
1/2 c. ricotta cheese
1/2 c. bread crumbs

Saute vegetables in butter. Layer vegetable and cheese in large casserole dish. Top with bread crumbs. Sprinkle with paprika. Bake 45 minutes at 350 degrees, uncovered.
