VEGETARIAN CASSEROLE 
2 cans pinto beans
2 cans diced tomatoes
1 pkg. egg noodles
1 clove garlic or garlic salt
1 sm. onion
1 tsp. cumin
1 tsp. chili powder
Parmesan cheese

Cook egg noodles. In frying pan, simmer onion, garlic, tomatoes, cumin, chili powder, and pinto beans, drained.

In a 2-quart casserole dish, put egg noodles on bottom. Put all remaining ingredients on top of egg noodles. Sprinkle Parmesan cheese on top.

Serves 6.

I made this for christmas. Everyone loved it, even my 5 year old nephew had seconds. I added mushrooms and black olives and a bread crumb topping. So delicious. I can't wait to make this again!
