PETITE CHEESECAKES 
2 (8 oz.) pkgs. softened cream cheese
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
18 lg. vanilla wafers
1 can cherry or blueberry pie filling

Beat together cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy. Line muffin pans with 18 cupcake papers. Place a vanilla wafer in the bottom of each. Fill each 2/3 full with cream cheese mixture.

Bake at 350 degrees for 15-20 minutes or just until mixture is set. Top each with pie filling. Chill. Can be frozen.
