PETITE CHERRY CHEESECAKES 
2 (8 oz.) pkg. cream cheese
3/4 c. sugar
2 eggs
Grated peel of 1 lemon
1 tsp. lemon or vanilla extract
Vanilla wafers
1 can cherry pie filling

Beat together cream cheese, sugar, eggs, lemon peel. Line muffin pans with paper cups. Place 1 vanilla wafer in the bottom of each baking cup and fill 2/3 full of cheese mixture. Bake at 375 degrees for 20 minute. Cool at room temperature. Top with cherry pie filling (or blueberry pie filling) directly from the can. Chill. Makes 2 dozen.
