PETITE CHERRY CHEESE CAKE 
2 pkgs. (8 oz.) cream cheese
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla

Soften cheese, and beat all together until light and fluffy. Line muffin pans with inserts (aluminum is best). Place one vanilla wafer (Sunshine) in each. Fill 2/3 full. Bake at 375 degrees 15 to 20 minutes or until set (watch). Cool and top with 1 tablespoon cherry pie filling. Makes 24.
