PEACH OR APPLE DUMPLINGS 
6 peach halves, peeled or apples, cored in a mixture of 1/4 c. sugar
1/2 tsp. cinnamon

PASTRY:

2 c. flour
1/4 tsp. salt
2/3 c. shortening
1 egg
2 tbsp. salt
2 tbsp. lemon juice

Sift together flour and salt, cut in shortening with pastry knife until half looks like meal; cut the rest until size of peas. Mix together egg, salt, and lemon juice; sprinkle over flour mixture; mix with fork until dough stays together. Round up into ball and roll out dough 1/8" thick on lightly floured board. Cut into 6" squares. Peach half into square and cover with pastry. Bake in 9"x13"x2" pan for 30 minutes at 425 degrees.
