SESAME CHICKEN FAJITAS 
2 1/2 lbs. boneless chicken breast
1/4 c. sesame seeds
1/4 tsp. cayenne pepper
Salt to taste
18 corn or 12 flour tortillas
2 c. chopped avocados (2 lg.)
4 c. shredded lettuce
Sour cream
Mango-Jalapeno Salsa

MANGO JALAPENO SALSA:

2 ripe mangos
1/4 tsp. minced jalapeno pepper
2 tbsp. coarsely chopped cilantro leaves
1 tbsp. fresh lime
1/4 tsp. coriander

Pound chicken to 1/8 inch thickness. Sprinkle with sesame seeds, salt, and cayenne (hot). Broil approximately 1 1/2 minutes on each side. Warm tortillas at 400 degrees for 3 minutes. Cut up avocado; shred lettuce. Slice chicken into strips, 1/4 inch thick. To assemble, place chicken in center of tortilla; top with avocado, lettuce, salsa, and sour cream. Fold and serve. Serves 4 to 6.

Peel mangos and chop coarsely. Combine all ingredients and serve right away.
