CREAM CHEESE POUND CAKE | |
2 c. flour 2 tsp. baking powder 1/4 tsp. salt 1 (8 oz.) cream cheese, soften 1 c. butter 1 1/2 c. sugar 4 eggs 2 tbsp. lemon juice 1 1/2 tsp. lemon rind 1 tsp. vanilla Powdered sugar Grated lemon rind Mix flour, powder and salt. Set aside. Cream cheese with butter until blended. Beat in sugar until smooth. Add eggs. Beat until light and fluffy; scrape bowl often. Add lemon juice, rind and vanilla. Slowly stir in flour mixture until blended. Mix until flour is completely mixed in batter. Batter will be heavy. Turn into buttered 8-10 inch tube pan. Bake 325 degrees 1 hour until tester inserted comes out clean. Let stand in pan 10 minutes. Invert and place on rack to cool. Place on platter. Dust with powdered sugar. Sprinkle lemon rind on top. |
