POTATO AND OYSTER STEW 
2 med. potatoes, peeled & diced
1 sm. onion, chopped
2 c. water
1/2 tsp. salt
2 c. milk or whipping cream
8 oz. can sm. bay oysters
1 tsp. dried tarragon leaves (opt.)

Simmer potatoes, onion, salt in water for 20 to 25 minutes or until potatoes are done. Mash potatoes in pan add milk, oysters, and tarragon leaves. Heat 2 to 3 minutes more. Add salt to taste.
