PORK AND SWEET POTATO STEW 
2 lb. boneless pork (cut into 2" cubes)
1/2 c. flour
1/4 c. oil
1/4 c. butter
2 cloves garlic, bruised
1/2 c. sherry
1 lb. sweet potatoes, peeled, cut into 1" pieces
1 1/2 c. orange juice
1/2 c. lemon juice
1/2 tsp. thyme
1/4 c. honey (or 1/3 c. sugar)
Salt & pepper to taste

1. Toss pork cubes in flour until coated, shake off excess and saute in small batches in flame-proof casserole in heated oil and butter mixture until browned on all sides.

2. Add garlic, cook 1 minute. Return all meat to casserole.

3. Add remaining ingredients, except sweet potatoes, stir to combine. Slowly bring to a boil. Cover and bake in a 375 degree oven for 1 hour.

4. Add sweet potatoes; continue cooking until meat and potatoes are tender.

One of my favorites. I skip the garlic and add a 1-inch chopped large onion, add 1/4 to 1/2lb extra sweet potatoes. Serve it with buttered, parsley noodles, or polenta (though that's a lot of "orange" on the plate).
