POTATO OYSTER STEW | |
2 med. potatoes, pared, diced 1 sm. onion, chopped 2 c. water 1/2 tsp. salt 2 c. milk or whipping cream 8 oz. (canned sm. bay oysters or lg. fresh) oysters 1 tsp. dried tarragon leaves, optional 1. Put potatoes, onion, water and salt in saucepan. Simmer 15-20 minutes or until potatoes are tender. 2. Mash potatoes coarsely right in the pan. Add milk, oysters and tarragon, if used. 3. Heat to serving temperature 2 to 3 minutes more. Taste and add more salt if needed. Serve hot. Makes 4 servings. |
