CLAM CAKES 
1 c. chopped clams with 2 tsp. lemon juice
1 c. flour
2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. pepper
2 eggs
1/4 c. clam broth (or milk)

Sift dry ingredients together. Add eggs well beaten with liquid. Add 2 teaspoons lemon juice and beat the while mixture well, until batter is smooth then add chopped clams. Let batter stand for 15 minutes. Drop by tablespoons into hot fat 375 degrees until golden, drain and serve.
