CLAM CAKES 
2 c. chopped clams
2 heaping tbsp. baking powder
3 tbsp. sugar
pinch of pepper
1 tsp. salt
1/2 c. milk
3 eggs
crackers

Beat together the eggs, milk, sugar, salt, pepper and baking powder. Add the clams and enough crackers to make a stiff mixture. Spoon out and form balls. Press into cracker crumbs, coating generously. Deep fry and enjoy!
