TAMALE PIE 
2 c. finely crushed corn chips
2 eggs
1 lb. ground beef
1 (15 oz.) can kidney beans, drained
1 can corn
1 can tomato sauce
2 bell peppers, chopped
1/2 c. black olives, sliced
2-3 tbsp. chili powder
1/2 tsp. salt
1/4 tsp. black pepper
2 1/2 c. Muenster cheese, shredded

Mix corn chips and eggs; press evenly crust in bottom of 11 3/7 x 7 1/2 x 2 inch baking dish. Brown beef and drain excess fat. Stir in beans, corn, tomato sauce, green pepper, olives, chili powder, salt, and pepper. Stir in 1 cup of cheese. Spoon mixture over crust. Sprinkle remaining cheese on top. Bake uncovered at 375 degrees for 25-30 minutes.

NOTE: Tamale pie can be assembled several hours in advance and refrigerate. Bake 35-40 minutes.
