LOBSTER THERMIDOR 
5 lg. lobster tails, frozen
1 sm. onion, sliced
1 tbsp. salt
5 whole black peppercorns
1 bay leaf
2 tbsp. celery

SAUCE:

1/3 c. butter
1/4 c. flour
1/2 tsp. salt
Dash nutmeg (optional)
1/4 tsp. paprika
1 tbsp. sherry
1 1/2 c. light cream
1/2 c. sharp cheese, grated

Cook lobster in water with seasonings. Preheat oven to 350 degrees. To make sauce: Melt butter in skillet. Remove from heat and stir in flour, salt, nutmeg and paprika. Add cream and return to a low heat until the mixture thickens. Add sherry and grated cheese until it melts. Arrange lobster meat in crab shells or ramekins. Pour sauce over mixture and bake at 350 degrees for 15 minutes; do not overcook. Serves 4 for dinner, 8 for first course.
