CHICKEN CARUSO 
2 chicken breasts, skinned, boned and cut up sm.
2 tbsp. oil
1 (15 1/2 oz.) jar spaghetti sauce
1 tsp. Italian seasoning
2 c. celery, finely chopped
1/2 c. green pepper
1 sm. onion, finely chopped

Saute chicken, celery, green pepper and onion in oil. Add spaghetti sauce and Italian seasoning. Simmer, uncovered for 1/2 hour. Sprinkle with Parmesan cheese if desired. Serve with rice. Serves 4-6.
