ZUCCHINI BREAD 
2 c. shredded zucchini
3 eggs
2 c. sugar
1 c. Crisco oil
2 c. flour
2 tsp. baking powder
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. cloves
2 tsp. vanilla
1 c. chopped nuts

Beat eggs, add oil and sugar. Beat well. Beat in zucchini. Blend in zucchini. Blend in dry ingredients that have been sifted together. Add vanilla and nuts. Pour into 2 greased and floured loaf pans. Bake 1 hour at 325 degrees.
