MOMMAS PASTA SALAD 
1 (16 oz.) box tri-color Ritoni noodles
1 cucumber
1 (15 oz.) can black olives, drained
1 large tomato
1/2 block of sharp cheddar cheese (or cheese of your choice)
1 bottle spicy Italian dressing

Cook pasta until tender; Meanwhile chop cucumber, olives, tomato and cheese all into bite size cubes. When pasta is done mix 1/3 of the bottle of dressing and stir, put in fridge until cold. Then mix the vegetables and cheese and remaining 2/3 dressing. Stir well. Serve cold/chilled.

Makes approx 8-10 servings. Serving size: 1 full bowl :)
