SHRIMP & WILD RICE SALAD 
1 box instant Uncle Bens wild rice
1 can pitted black olives
6-8 oz. salad shrimp, cooked, drained & cooled
1 can artichoke hearts (optional)

Cook wild rice according to directions on box. Chill in bowl. Add black olives and artichoke hearts when rice is cooled. Toss gently. The shrimp seems to taste best if it is added right before serving.
