CHICKEN WILD RICE SALAD 
1 (6 oz.) long grain and wild rice mix
2 c. cubed cooked chicken
1/4 c. green pepper
2 tbsp. chopped pimiento
1/2 c. mayonnaise
2 tbsp. Russian salad dressing
1 tbsp. lemon juice
Salt to taste
1 to 2 avocado, sliced

Cook rice mix, cool. Add chicken, green pepper and pimento. Combine mayonnaise, Russian dressing, lemon juice and salt. Add dressing to rice mixture. Toss. Refrigerate until serving time. Spoon salad mixture over avocado slices. Makes 6 servings.
